I made the perfect meal tonight! A meal where everyone ate at least a little bit of everything served, and it only took 30 mins. Stooooop it, right?! I promise it’s true!
It all began by realizing at 3pm that I never put the chili in the crock pot 🤦♀️. I’d been craving cornbread muffins, and I love the chili/cornbread combo. Once I knew that dinner would not be ready by 5pm, even if I started immediately, I had to improvise.
I realized that the only part of the chili I was actually craving was the bratwurst. So I threw some cornbread muffins in the oven and bratwurst on the grill. I served it with some sliced cucumber, hitting all of the major food groups, and voila! A meal that everyone ate.
This doesn’t even happen when we order pizza. Someone wants cheese, another pepperoni. Someone wants salad, another buffalo wings. It’s not as simple as we would expect, and it isn’t necessarily cheap! This meal was about $12, which is pretty good for us. It was gluten-free and dairy-free, and we still had leftovers.

You are so sweet! I always just make sure I have protein, fiber, and a carb! I like things that are different, and I try to make small substitutions to switch things up without being a lot of work. If I can’t do it in 30 minutes or less, it’s not happening 😂
